I know protoss started out as OP but they have had like 7 patches to SC2 and in every one the protoss were nerfed. Team liquid crunched the numbers and found that now toss players win 1v1 43% of the time, zerg win like 52% of the time, and terrans win 60% of the time. Terran is way OP and toss was hit by the nerf bat. I myself play toss and am waiting for the buff ball to come smack us right in the face

My fav Protoss strategy:
Send one probe to the enemy base early, build a pylon and then Gateway near their base, but out of sight. Build forge and more probes at your home base. build cannons near their ramp and then start rushing in Zealots
Optionally sneak a probe around dark corners of their base “island” and build lots of pylon/cannon combos before building a Gateway.
